Happy Easter!

Happy Easter everyone! In my mind, Easter heralds the arrival of fresh Spring asparagus and I always feature it in my Easter meals. Ham in any way, shape, or form is another favorite for Easter dinners at our house, and dessert can be whatever your heart desires…along with, or after, all of those chocolate bunnies and eggs, of course!

Here’s a recap of some Easter-worthy dishes, just in case you’re still hunting for the perfect recipe. May you and yours enjoy a peaceful, beautiful and happy day.

    • Cecile, these are middle eastern holiday cookies, traditionally made for around Christmas time and Easter as I understand it. I have a friend who is Lebanese and his mom made them all the time. As to the origin of the name, I don’t have the answer, but you might try asking Sawsan at Chef in Disguise…she makes these, too, lives in Jordan and may have more info on the history. In fact if you search Ma’amool on her blog the post may come up. 🙂

  2. Such a wonderful round-up of dishes, Betsy, any of which would make your Easter table something special. To be honest, though, I envy your azaleas. Mine are nowhere near blooming and, for the first time ever, they’re going to miss Easter. I’ve always thought it strange that they seemed to “know” when Easter would arrive and they’d be in full bloom. Now that they’re not in bloom, it is really strange!
    I hope you and your family have a wonderful Easter, Betsy.

    • Hi John. We only have a few of our smaller azaleas in bloom right now, the rest have their buds waiting for the next warm day to pop. They are confused since we’ve been having a day or so of 70 degrees, then plunging to below freezing for most of this year so far. We usually have dogwoods blooming by now, but not this year…they are smart, as it will go back to freezing later next week. Hang on, your blooms are just around the corner! 🙂 Happy Easter to you and your family, John!

  8. Happy belated Easter Betsy, and a wonderful round-up. I actually made some ma’amoul myself here just before Easter for my parents. I had no mould so I had to use a small ladle to push them in to for shaping, lol! 😀

    • Ladles work just fine on these and so does making them like a small calzone and crimping the ends with a fork. I was given a mould, otherwise I’d never have had one, either! Hope you had a Happy Easter, Charles. I need to come and see what you’ve been up to in your travels. 🙂

  10. That soup looks like the perfect spring starter. Beautiful. And I did indeed make your famous potato salad. It got rave reviews as usual and my niece told me it was the best version of potato salad she had ever had. Still eating a few bits for breakfast (I squirrel away a small tupperware dish of it before I serve it…I am a little selfish).

    • Thanks Geni! I made the potato salad and took it to an event on Easter. There was only a tiny amount left and I meant to try it with eggs, but ate it all up first! Oh, darn, I guess I’m going to have to make more. 🙂 So glad your crew loves it so much and thanks for telling me.

    • I think the orzo with ham and asparagus is going to be on my list next week, or possibly this weekend if it gets as warm here as it’s supposed to. I’m fine, thanks, Barb. I, too, have been super busy and feel like I have many irons in the fire. This week has been full of deadlines. But otherwise all is well. Hope you and yours are well, too! 🙂
