This recipe is from the post D-Con, D-Book Festival and Some De-licious Sliders.
Makes 6-8 Sliders, can be doubled
1 lb. Ground chuck, preferable grass fed
1/4 cup fine chopped red onion
1 Tablespoon Worcestershire sauce
Kosher salt and fresh ground black pepper to taste
2 large sweet onions
1 Tablespoon extra virgin olive oil
Kosher salt and fresh ground black pepper
6-8 Slider buns or small rolls
Other Suggested Toppings
Crumbled blue cheese or cheddar cheese
Crumbled crisp cooked bacon
Sweet bread and butter pickles such as Wickles
Jalapeno peppers
In a medium sized mixing bowl combine the ground chuck, red onion, Worcestershire sauce and the salt and pepper. Mix together well with hands. Scoop out about 1/3 cup of the meat mixture and shape into a small patty. Make an indention in the center. Repeat with the remaining meat mixture until you have 6-8 patties total, or have used up the meat.
In a large non-stick skillet, add the olive oil and heat over medium heat, then add the onions. Stir frequently until they are caramelized and a deep golden brown, about 15-20 minutes. Season with kosher salt and black pepper. Transfer to a small bowl.
Cook the sliders over a medium high heat grill, about 4 minutes per side or until medium well. Transfer to a plate and allow to rest for 5 minutes. Serve the sliders on slider buns or small rolls, and top with the cheese, onions, pickles or whatever your favorite toppings may be.
