Serves 4
5 cups fresh watermelon, seeded and cut into chunks
2 Tablespoons fresh basil or mint, slivered
1/3 cup crumbled salty feta cheese
A pinch of Kosher salt and fresh ground black pepper to taste
Place all ingredients except the salt and pepper in a medium sized bowl, and stir gently to combine. Season very lightly with salt (the feta is salty, too) and several good grinds of fresh black pepper. Chill for 1 hour and serve.
