Horiatiki means “of the village” and is the Greek salad that is found all over Greece in many forms. It’s an easy thing to experiment with, but I like this one of Cat Cora’s because it has more flavor than most.

Cooks note: Do read her note at the beginning about the vinaigrette and how she makes extra for dipping. The recipe makes a lot of vinaigrette, and as one of those of us who don’t like our salads heavily dressed, I don’t use all of it on the salad.
