Tonight’s supper is my Penne with Kale, Sausage and Roasted Tomatoes recipe. In the beginning, I always made this with Sweet Italian Pork Sausage, but now I substitute Chicken Sausage to make a healthier dish. This takes a little effort in prep and cooking time, but it’s worth it, and the result is a somewhat Sicilian-inspired dish.
For a great kale side dish to accompany your favorite meal, follow the section of the recipe that includes the kale, nuts, shallots and currants, and use all olive oil for the fat.
You’ll make me very happy—as well as you’ll be doing me a big favor—if you try out this recipe and comment back here to let me know what you think. We love this dish, and the leftovers are good for work nights, too. Just microwave a bowl full for 2 minutes or until just hot, and serve with fresh grated Parmesan cheese on top. Yum!
Great dish for a summer repast. Finish with sorbet…superb!
