Happy 4th of July! Happy Weekend!

fireworksIt’s a great day to celebrate our country’s independence, and to celebrate independence in general. We take for granted the rights we have in this country to make our own choices, and to choose those who enact those choices for us. We have the freedom to live where we want, cross our state borders freely, speak our minds and interact with the rest of the world. We should never forget that we are fortunate to be citizens of, and to live in, this country, nor forget the price and the responsibility of protecting our freedom to do so.

Today in America is all about celebrating liberty and freedom. And celebrate we will!

Holiday Happiness: Ham, Fontina and Spinach Bread Pudding

The proof was in the pudding...and now it's in my tummy!

I’m not making one thing for Thanksgiving Dinner today. We are home for the holiday and plan to dine out late this afternoon. I’m saving myself and looking forward to cooking Christmas dinner with my mom next month, but meanwhile, I did want to honor this holiday with something special for breakfast. I tore this recipe out of Gourmet Magazine 12 years ago, then made it so often that I mangled the tear sheet and had to transfer it, handwritten, into my personal recipe book (this was before the time of recipes on the internet), and now some parts are almost illegible from plain ‘ole custard spattering and use. This is my go-to holiday brunch dish, and I do believe this is the best savory bread pudding I’ve ever put in my mouth! Continue reading

You say Potato, and I say Frittata!

When I think of leftover roasted potatoes, I think “Frittata,” which is an egg-based dish similar to an omelet or a quiche, with added goodies like veggies, meat and cheeses. They are not hard to make and a fantastic way to use up some supplies in your fridge.

I’m still working through my CSA box goodies from last week, and tonight I have on hand some roasted potatoes, onions, a few grape tomatoes, bell peppers, ham, herbs, eggs and Parmesan cheese. If that doesn’t scream “frittata” I don’t know what does! Sometimes I add some raw spinach if I have it, or raw kale, which I do happen to have in my garden, so it’s going in, too.
